Tip: If the eggplant is purchased wrapped in plastic wrap, remove this as soon as possible to allow for breathing and freshness.

It’s best to store eggplant at around 10 degrees celsius, but if you aren’t planning on eating it within 2 days, then it should be refrigerated. When refrigerating, wrap in paper towel and store in the crisper drawer. Do not try to force it if it’s too large for the drawer as this can damage the skin which will cause decay. Instead, place it on a refrigerator shelf.
