Frozen (cooked): 10-12 months

Tip: Don’t refrigerate raw sweet potatoes as this can alter their flavour when cooked.

To allow for air circulation, store sweet potatoes in a loosely covered bag. Sweet potatoes can also be frozen once cooked. Wash, peel and boil until tender. Slice or mash the sweet potatoes and then add a little lemon juice to prevent discolouration. Once cooled, place in airtight containers/bags and freeze.
